Shorabit Adas
Once again this year, MACBA’s Kitchen is participating in the Raval(s) Festival which is sponsored each year by the Tot Raval Foundation along with many other neighbourhood organizations. Specifically, The Kitchen group is joining the Soups from around the world project making Shorabit Adas.
This year, The Kitchen group has decided to prepare a soup inspired by a recipe from Laila El-Haddad’s mother. Together with Maggie Schmitt, El-Haddad is the author of the book The Gaza Kitchen: A Palestinian Culinary Journey (Just World Books), published by Ediciones del Oriente y del Mediterráneo. At The Open Kitchen we were lucky to share popular knowledge about Palestinian culture with El-Haddid and Schmitt.
We will be making the soup with organic lentils and vegetables and tubers from the sister project Horta l’Africà.
During these terrible times of Israeli bombardment of civilian population in Palestine, we remember, safeguard and lovingly honour this rich culture under threat that Laila and Maggie shared with us through “silenced cooking”.
Shorabit Adas recipe
Ingredients:
- Onion
- Garlic
- Red lentils
- Seasonal garden vegetables from Horta l’Africà
- Parsley
- Spices: cumin, turmeric and coriander
- Lemon wedges
- Olive oil
- Salt
Preparation:
Heat the oil in a soup pot. Sauté the onion until it is caramelized, making sure that it does not burn. Add the peeled and chopped garlic until it becomes a bit golden, then add the seasonal vegetables, chopped finely. Sauté it all for a little while, then add the water and the lentils, and let it boil until everything is cooked. Before turning off the fire, add the spices.
You can serve it with a little bit of chopped parsley and a piece of lemon, as it is or as a purée.
